Bó Rua Farm Cheddar
Our cheddar is handcrafted on the farm by Norma, from the milk of our Montbéliard and Friesian herd. It is gently aged for typically nine months, on traditional wooden boards, to develop a firm yet delicately creamy texture and full, approachable flavour.

“Bright yellow paste with a pale yellow rind. There is a tangy aroma and a farmyard note. The texture is soft but slightly grainy with a good bite. The taste is zingy and long lasting and the texture pleasingly mouth-coating. The salt level is perfect and the flavour mellow and rounded.”

The Grand Cru of Irish Milk
Once the cows are milked in the morning, the milk flows under gravity to the cheese dairy next door, where it is gently pastuerised and hand filled into sustainable glass bottles. Milk is a fragile liquid and can be easily damaged, so we keep processing to a bare minimum to ensure our milk retains its natural deliciousness. Our milk is not homogenised which means the cream will naturally float to the top of the bottle.
We have always said that our grass fed Montbeliard and Friesian cows produces the very best milk, it came as no surprise when it scooped the Gold Medal for Best Dairy Milk at the Blas na hEireann, Irish Food Awards in 2020 – during our first year of bottling our milk for retail.
